If I had a top ten list of things that save me time as a mother, planning a weekly menu would be somewhere near the top. Menu planning is incredibly useful – not only does it save me the time spent standing in front of the refrigerator wondering what to cook every day, it also saves me money. When I have a menu, I can plan my purchases more logically: I’ll plan meals to use fresh veggies before they go bad, or I’ll buy a bag of chicken and freeze half of it in a marinade (which saves me time later when I need a ready-made meal).

Each Sunday, I will share my weekly menu with you (with recipes when possible). I would love to know what you have on your menu too; leave a link to your blog in the comments so we can see your menu!

Here is what I am cooking this week:

Sunday

Lunch: leftovers &/or pasta with pesto

Dinner: chili (from freezer)

Monday

Lunch: chicken pot pies (bake potatoes for this week’s lunches too)

Dinner: chicken fiesta salad (based on the recipe found here)

Tuesday

Lunch: chili-topped baked potatoes

Dinner: chicken fiesta salad

Wednesday

Lunch: chili-topped baked potatoes/leftover salad

Dinner: pork loin, rice, steamed veggies

Thursday

Lunch: soup & leftover salad

Dinner: pork loin, rice, steamed veggies

Friday

Lunch: ravioli

Dinner: roasted whole chicken with veggies & potatoes

Saturday

Lunch:  mac & cheese casserole

Dinner: roasted whole chicken with veggies & potatoes
