Menu Week of 2009-11-15

The best part about this week’s menu? We get to start it by hanging out with our good friends (Emily and Matthew) to watch the Chiefs play lose. (cough)

A few things from last week’s menu are getting carried over – the nice thing about menu planning is that if you have an unexpected variation, you just shift everything over. Last Sunday my mom and sister visited and we cooked a big batch of chicken breasts for lunch. There were enough left over that we ate them in salads and pasta for several days.

Here is the plan for this week:

Sunday
Lunch: pasta with eggplant
Dinner: Stuffed bell peppers (recipe will be posted this week), multigrain bread with dipping oil

Monday
Lunch: Soup & sandwiches
Dinner: Stuffed bell peppers, multigrain bread

Tuesday
Lunch: Baked potatoes w/broccoli & cheese
Dinner: Spaghetti pie (from freezer) (recipe will be posted soon)

Wednesday
Lunch: Baked potatoes w/broccoli & cheese
Dinner: Garlic shrimp pasta (I just toss angel hair pasta with olive oil, tomatoes, shrimp, and pepper)

Thursday
Lunch: leftovers
Dinner: Chicken ranch wraps, applesauce (Multigrain wraps with chicken, lettuce, roasted red bell peppers, cooked carrot/broccoli mix, hummus and/or ranch)

Friday
Lunch: Chicken w/couscous
Dinner: Chicken ranch wraps, applesauce

Saturday
Lunch: leftovers
Dinner: Friends over for dinner – we’ll either do a baked potato bar or a big salad of some kind.
